That’s the culinary advice from the owner of the newest barbeque smokehouse restaurant in the Quad Cities.
Fatwoods BBQ Smokehouse opened for business in late February at 1516 Fifth Ave. in downtown Moline. It is owned by Collin Ammerman, who is also owner of Debord’s Catering in Moline.
Fatwoods is open 4 to 8 p.m. on Thursdays; and noon to 8 p.m. on Fridays and Saturdays. However, those closing times may vary if the food runs out fast, according to restaurant officials.

Here are some of the items on the menu:
- Starters: brisket fires, BBQ chicken flat bread, loaded mozzarella sticks, and smoked wings.
- Sandwiches: pulled pork, pulled chicken, and chopped brisket.
- Smoked meats: pulled pork, brisket, smoked chicken and baby back ribs.
- Sauces: QC Sweet Slap, Honey Garlic Slap, BBQ Mayor, Alabama Slap.
Soon after Fatwoods first opened for business on Friday, Feb. 20, Mr. Ammerman posted this message on Facebook: “The turnout has been great these first couple days! We really appreciate everyone who has made it out so far! Brisket is resting, the ribs and chicken are next.”
One area resident who has become a big fan of Fatwoods is Taegan Renee of East Moline.
“Absolutely amazing barbeque. The food was packed with flavor, cooked perfectly, and you can really tell they put care into every dish,” the East Moline woman told the QCBJ. “The meat was incredibly tender and smoky, and the sides were just as impressive. … The perfect place to enjoy great barbecue.”
